At the age of 21 I was diagnosed with Celiac disease, and for a college student living in a dorm that was devastating.  I could no longer eat with my friends in the dining hall, enjoy late night pizza delivery, or even drink a beer.  It was an extremely isolating experience.


Because the local grocery stores did not carry many gluten free items at that time I would plan monthly trips home to shop at Whole Foods, and stock up on gluten free items that I could eat in my dorm room.  This however was a trial and error process.  Some of the items were no comparison to the real-deal, especially breads, cakes, and cookies.  Needless to say, I began to loose weight rapidly.


My mom, a dedicated Italian mother, was determined to find a way to feed me the foods I once enjoyed.  She started reading gluten free cookbooks, and experimenting with her own recipes and making substitutions.  At first the outcome was not good, but eventually she came up with the perfect balance of ingredients, and nobody could even tell that her recipes were now gluten free.


Over the years more and more stores have started to carry gluten free items, however, I have yet to find any cookies that compare to my mom’s.  With my mom’s help I decided to take the next step of creating my own GOURMET gluten free cookie company.  We hope that you will try our cookies!
