I started Glutenus Minimus in the spring of 2008 to provide GOURMET gluten-free baked goods to the gluten-free community. Six years prior, I was diagnosed with celiac disease while a senior in college. Adjusting to the gluten-free diet while living at college was difficult, to say the least. I could no longer eat with my friends in the dining hall, enjoy late night pizza, or even drink a simple beer.
My mom, a dedicated Italian mother, was determined to find a way to feed me the foods that I once enjoyed. She started reading gluten-free cookbooks and experimenting with her own recipes by making substitutions. Over time she came up with the perfect balance of ingredients, and it was impossible to tell that her baked goods were now gluten-free.
After college, I started baking with my mom to create new recipes to satisfy all of my gluten cravings. I discovered that the things we baked at home were far better than any products we could find in the store. So, I took a leap of faith and launched my own line of gluten-free products. Glutenus Minimus has continued to grow and expand over the years, but one thing has remained the same: the delicious gourmet taste. I truly hope that these products will bring as much joy to you and your family as they have to mine.
